There are ten thousand of them for god's sake. You can kill a lot of Jedi, but killing all of them in one night is almost impossible. Some, like the fellow we see in Obi-Wan, were killed by Inquisitors. Vader personally killed what I would wager to be like half of the remaining 5% Jedi during his lifetime. It's also important to note that we have not, on screen, seen much of them AFTER the Empire's fall. Realistically, the number is probably between 1-5%. If we take at face value that even 1% survived the purge, that's 100 Jedi out there in the galaxy. Others were in defensible positions that made them harder to kill. Some were presumably in isolation or visiting far away temples or perhaps simply in transit. Not all in one place, not all at the temple, not all on the battlefield with clones. There were ten thousand of them, spread throughout the galaxy. There were around 10,000 Jedi Knights defending the galaxy.
